Paleo: Week 4. Two weeks in, I was down almost ten pounds, but I’ve gained a bit of that back by now. Probably all the bacon. In week 4, there will be no bacon.

Oh look. Some vegetables. I’ve been a vegetable chopping and chomping machine, which I guess is the whole point of this. I did have a bite of ice cream the other night, and it didn’t even taste good. Ice cream is pretty much my religion, so this is the most blasphemous thing – ice cream tasted bland, but the plain steamed veggies I had with dinner were SO delicious, like they’d been covered in cheese.

Breakfast has been difficult for me. I don’t want to wake up any earlier to have to cook, so I make a week (or at least a few days) worth of breakfast on Sunday. The sweet potato hash got nixed after week one, when my coach told me sweet potatoes were only for after workouts. Weeks 2 and 3 I made frittatas, but I needed to switch it up this week. I’m sure you’ve seen something like this on pinterest, that’s where I got the idea.

And finally, my masterpiece. I made spaghetti (squash) sauce from scratch last night. I made my own base, though the tomatoes were canned – I’m not a miracle worker. This is before I added the turkey and a bit more tomato puree.

My “cheats” since starting paleo have been a tumbler of whiskey or cider on the weekends. Starting February 3, I plan on putting a stop to that as well…at least for the rest of the month of February.
